Please, go to `Edit profile` Instagram and just re-type your new e-mail. Probably, then you will need to approve your new e-mail. Instagram will send you notification to your mailbox.

Go to “Edit Profile” on your Instagram settings.
Simply type your new email. Instagram will send that email with a verification link.
Get the email verified and you are good to go! :)

If you want to delete your account so you can start over, go to “manage accounts” and then> delete account.

It’s simple, really. Go to your profile, which can be found by clicking the bottom right button at the bottom of your screen while in the Instagram app. Then, click on the “edit profile” function. Scroll to the bottom, and you should see an option for your email address. Tap on that, and change the address to what you would like.

Click the gear on your profile, go to edit profile, and there you'll see your email address. Delete the old one, add the new one, save.
