Before following other procedure I recommend you to try to open your account using the phone number.
How to reopen Instagram account using a phone number?
Phone number makes it easy if you have not remembered your Password or email address. Another way is by using your Facebook account. You may have linked your Instagram account to your Facebook from there you can reset your account. And then try to delete it. Follow some steps to try this way.
Open your Facebook account.
Go to About page showing all your details.
On the Contact and Basic info, tab checks the Instagram account linked.
